Abstract

La invencion se refiere a una confiteria sin azucar, caracterizada porque comprende una carga edulcorante que comprende maltodextrinas ramificadas que presentan entre 15 y 35% de 1?6 enlaces glucocidicos, un contenido de azucares reductoras inferior a 20%, un indice de polimolecularidad inferior a 5 y una masa molecular promedio numerica Mn a lo mas igual a 4500 g/mol y al menos un poliol elegido entre el grupo constituido por eritritol, manitol y maltitol, dichas maltodextrinas ramificadas constituyendo de 0.5 a 75% de la carga edulcorante y dicho poliol constituyendo a lo mas 13.5% y de preferencia a lo mas 10% de la carga edulcorante que comprende.
