Abstract
Se describe un aderezo alimenticio constituido de una base acuosa y de 0-40% en peso de grasa y/o aceite, que contiene además un agente espesante no ionico y un electrolito y que tiene un pH no mayor que 4, y que contiene también 3-8% en peso de una proteína globular desnaturalizada con calor, el aderezo se prepara a través de un procedimiento que comprende los pasos de: (a) disolver una proteína globular, un agente espesante no ionico y un electrolito en agua, (b) ajustar el pH a < 4 agregando un ácido, (c) calentar y agitar lentamente la solucion, de manera que se presenta la desnaturalizacion de la proteína, (d) enfriar (e) opcionalmente mezclar otros ingredientes, en donde opcionalmente, el paso (d) sigue al paso (e).
