Abstract

El agente saborizante obtenido por un proceso en el cual las semillas de una planta comestible son germinadas, los brotes obtenidos son maduros bajo el efecto de sus enzimas endogenas, una fermentacion opcional de estos brotes son concebidas con por lo menos un microorganismo, las enzimas dichas y/o microorganismos son inactivados y todo o una parte de la maduracion y/o los brotes fermentados son recuperados y se usa este agente saborizante como materia prima para la preparacion de productos de la reaccion maillard, solo o combinado con otros materiales ricos en sabor precursor y/o realizantes del sabor.
