Abstract
Lactic acid bacterial cultures are used in the manufacturing of fermented products. During the growth of lactic acid bacteria, metabolites such as diacetyl (2,3-butanedione) are produced. In the production of certain products such as fruit juices and beers the presence of diacetyl (2,3-butanedione) is undesirable. Disclosed is a genetically modified lactic acid bacterium of a Leuconostoc species having reduced diacetyl reductase activity, acetoin reductase activity and butanediol dehydrogenase activity. Also disclosed is the use of such bacteria cultures in the manufacture of food products.
