Abstract

La presente invención se refiere a un método para preparar pasteles de grano inflados, caracterizado porque consiste esencialmente de las etapas de: a) introducir granos enteres en un aparato de cocción rotatorio; b) cocer los granos enteros con vapor y agua en el aparato de cocción rotatorio, durante 20 a 60 minutos, alcanzando una temperatura de 116°C (240°F) a 127°C (260°F) y una presión de0.7 kg/cm2 (10psi) a 1.41 Kg/cm2 (20 psi) respectivamente durante 5.25 minutos; hasta una humedad de 20-50% , obteniendo la completa gelatinización de los granos; c) secar los granos enteres a 10-17% de humedad para formar los granos enteros secos; e d) inflar los granos enteres secos y aglutinarlos en máquinas de inflamiento de pastel de arroz, para formar un pastel de grano entero inflado, de apariencia no-homogénea, en donde la estructura del grano entero se mantienen a lo largo del proceso.
