Abstract

La presente invención se refiere a un producto de confitería congelado compuesto, caracterizado porque comprende un centro de confite helado totalmente recubierto con un recubrimiento en base a chocolate, donde el recubrimiento consiste en una composición en base a chocolate aireado con una densidad comprendida entre 0.26 y 0.65 g/cm3, y un tamaño promedio de burbuja de 0.1 hasta 1mm, el recubrimiento tiene un espesor de 3 hasta 20 mm, el recubrimiento en base a chocolate comprende 14% hasta 33% en peso de leche, de 29% hasta el 40% en peso de grasa, de 37% hasta 50% en peso de agente edulcorante y de 0.3% hasta 1% en peso de emulsionante.
