Abstract

La presente invención se refiere a producirse de manera eficiente fideos fritos de excelente calidad con una longitud de aproximadamente 1 a 7 centímetros mediante un proceso para la producción de fideos fritos que incluye los pasos de: preparar fideos crudos; gelatinizar los fideos crudos; cortar los fideos crudos gelatinizados en fideos de 1 a 7 centímetros de largo; y freír los fideos cortados permitiendo que estos floten de manera natural en el aceite de freído.
