Abstract

La presente invención se refiere a un proceso para la producción de uno o más productos de fermentación de una composición de azúcar, que comprende las siguientes etapas: a) fermentación de la composición de azúcar en la presencia de una levadura que pertenece al género Saccharomyces, Kluyveromyces, Candida, Pichia, Schizosaccharomyces, Hansenula, Kloeckera, Schwanniomyces o Yarrowia; y b) recuperación del producto de fermentación, en donde la levadura comprende los genes araA, araB y araD y la composición de azúcar comprende glucosa, galactosa y arabinosa. Proceso para la producción de uno o más productos de fermentación de una composición de azúcar, que comprende las siguientes etapas: a) fermentación de glucosa, galactosa y arabinosa, de una composición de azúcar, en la presencia de una levadura que pertenece al género Saccharomyces; y b) recuperación del producto de fermentación, en donde la levadura comprende los genes araA, araB y araD.
