Abstract
La presente invención se refiere a proteínas de leguminosa de astringencia reducida que se obtienen por fraccionamiento de los productos de la proteína de leguminosa, los cuales son completamente solubles y estables al calor en medio acuoso a un valor de pH ácido de menos de aproximadamente 4.4 en proteínas menos astringentes, de peso molecular inferior, y proteínas más astringentes, de peso molecular elevado.
