Abstract

En la presente se describe un método para mantener el rendimiento de la proteína de maíz durante la extracción, que comprende obtener un material de gluten de maíz, lavar el material de gluten de maíz para retirar los componentes no proteicos con un solvente de etanol-agua que comprende al menos 85 % en peso de etanol para obtener un producto concentrado de proteína de maíz, donde la pérdida de contenido de proteína de maíz durante la extracción es inferior al 25 % de la proteína de maíz total.
