Abstract
Un almidón granular no pregelatinizado inhibido apropiado para uso como un ingrediente alimenticio en sustitución de un almidón químicamente modificado puede ser preparado mediante calentamiento de almidón granular no pregelatinizado en un medio alcohólico en la presencia de una base y/o una sal.
