Abstract

Un producto de proteína de leguminosas, que puede ser un aislado, produce soluciones estables al calor a valores de pH bajo y es útil para la fortificación de bebidas carbónicas y bebidas deportivas sin precipitación de la proteína. El producto de proteína de leguminosas se obtiene al extraer un material fuente de la proteína de leguminosas con una solución acuosa de sal de calcio para formar una solución acuosa de la proteína de leguminosas, al separar la solución acuosa de la proteína de leguminosas de la fuente de la proteína de leguminosas residual, al ajustar el pH de la solución acuosa de la proteína de leguminosas a un pH entre aproximadamente 1.5 y 4.4 para producir una solución acidificada de la proteína de leguminosas, la cual se puede deshidratar, después de la concentración y diafiltración opcionales, para proporcionar el producto de la proteína de leguminosas.
