Abstract

La presente invención se refiere a un producto de proteína de legumbre que tiene un contenido de proteína de al menos alrededor de 60% en peso (N x 6.25) d.b., preferiblemente un aislado de proteína de legumbre que tiene un contenido de proteína de al menos alrededor de 90% en peso (N x 6.25) d.b., se prepara de un material de fuente de proteína de legumbre por extracción del material de fuente de proteína de legumbre con una solución de sal de calcio acuosa, preferiblemente solución de cloruro de calcio, para causar la solubilización de proteína de legumbre de la fuente de proteína y para formar una solución de proteína de legumbre acuosa, separar la solución de proteína de legumbre acuosa de la fuente de proteína de legumbre residual, opcionalmente concentrar la solución de proteína de legumbre acuosa mientras que mantiene la fuerza iónica substancialmente constante al usar una técnica de membrana selectiva, opcionalmente diafiltrar la solución de proteína de legumbre opcionalmente concentrada, y opcionalmente secar la solución de proteína de legumbre opcionalmente concentrada y opcionalmente diafiltrada.
