Abstract

Un producto novedoso de proteína canola que consiste predominantemente de proteína canola 2S y que tiene propiedades mejoradas de solubilidad, tiene una proporción aumentada de proteína canola 2S y una proporción disminuida de proteína canola 7S, y un contenido proteínico de menos de aproximadamente 90% en peso (N x 6.25) d.b. El aislado novedoso de proteína canola se forma mediante tratamiento térmico o precipitación isoeléctrica de un sobrenadante acuoso a partir de la formación y precipitación de micelas de proteína canola, para llevar a cabo la precipitación de la proteína 7S que se sedimenta y se retira.
