Abstract
La presente invención se refiere a un método para proporcionar un producto de pectina que contiene fibra a partir de un material vegetal. El método comprende los pasos que consisten en: (i) proporcionar un material vegetal que comprende pectina, donde la pectina tiene un grado de esterificación de 55% o menor, (ii) agregar una solución acuosa ácida al material vegetal que contiene pectina obtenido en el paso (i) y proporcionar una suspensión del material vegetal, donde el material vegetal suspendido proporciona un sistema in situ mediante el hinchamiento del material vegetal bajo condiciones donde la pectina se mantiene dentro del material vegetal, y (iii) obtener el producto de pectina que contiene fibra de la suspensión proporcionada en el paso (u), en donde el material vegetal está sustancialmente empobrecido de cationes divalentes.
