Abstract

The invention relates to food industry, namely to a process for making chickpea-containing bread.The process, according to the invention, comprises dissolution in water of yeast and salt, addition of wheat flour with the addition of flour of germinated chickpea seeds in a ratio of 15…20% of the total flour quantity, homogenization of components to obtain a dough, its kneading by hand for 10 min or in a mixer for 5 min, followed by the fermentation of the dough during 30…35 min at the temperature of 30…32°C, dough shaping and placement into molds, proofing at the temperature of 35…40°C and air humidity of 75…80%, and baking for 30 min at the temperature of 220…230°C.
