Abstract
The invention relates to the food industry, namely to a process for producing grain mass, as well as to unleavened bread, biscuits, gingerbread and cake prepared with the use thereof.The process for producing grain mass provides for the surface cleaning of the hulled or unhulled grains with seed coat and with the intact hyaline layer, pre-soaking of seeds in water from melted snow at a temperature of 26…36° for 10…12 hours, germination of seeds in water enriched with oxygen in the concentration of 15…35 mg/l during 4…6 hours at a temperature of 16…26°C in the ratio grain:water enriched with oxygen of 1:1 until the appearance of shoots of 1.0…1.2 mm, disinfection of germinated grains in silver water with the concentration of silver ions of 0.10…0.15 mg/l at a temperature of 16…25°C during 1…3 hours, grinding of germinated grains at a temperature of 20…26°C up to the particle size of at most 1.0…1.2 mm and mixing thereof.The result consists in reducing the length of the production process, increasing the biological value and improving the quality of the finished product.
