Abstract
Изобретение относится к молочной промышленности, в частности к получению сыра.Целью изобретения является увеличение выхода и улучшение качества продукта.Способ предусматривает смешивание концентрата молока, полученного методом ультрафильтрации или диафильтрации с содержанием сухих веществ 38%, с добавками и глюконо-дельталактоном.Полученную смесь разливают в индивидуальные упаковки, выдержлу проводят при комнатной температуре или при 5°С.Глюконо-дельталактон вводят в количестве 2%.
