Abstract
The invention is related to the dairy industry, especially to the pressed cheese obtaining.The purpose of the invention consists in the increasing of efficyency and improving of product's quality.For the pressed cheese obtaining, the milk concentrate obtained by the ultrafiltration method or diafiltration with the content of dry substances at 38% is mixed with supplements and gluconadelta-Cactone, the obtained mixture is poured in individual packing and is standed until the ending of coagulation and maturity process at a room's temperature or at a temperature of 5°C, the gluconodelta-lactone being introduced in the amount of 2%.
