Abstract

본 발명은 고도로 칼슘이 강화되고 풍미와 저장안정성이 뛰어난 두유나 우유음료를 제공한다. 두유나 우유음료는 난용성 칼슘을 첨가하여 칼슘을 강화하였고, 40cp 의 정도가 초과되지 않도록 하는 양으로 콜로이드상의 미결정 셀룰로오스의 저강도 한천을 첨가하여 두유나 우유음료에 칼슘을 안정화시켰다.

Claims (14)

  1. 40cp 의 정도를 초과하지 않고, 식용의 난용성 칼슘화합물이 균질하게 분산되어 있고, 콜로이드상의 미결정 셀룰로오스와 저강도 한천을 함유한 것을 특징으로 하는 두유음료 또는 우유음료로 구성되는 칼슘강화 음료.
  2. 제1항에 있어서, 난용성 칼슘 화합물의 칼슘환산량이 0.15중량%, 콜로이드상이 미결정 셀룰로오스가 0.1~0.3중량%이고, 저강도 한천이 0.01~0.05중량%인 것을 특징으로 하는 칼슘강화 음료.
  3. 제1항 또는 제2항에 있어서, 저강도 한천이 칼슘의 0.1~0.4배 함유된 칼슘강화 음료.
  4. ① 두유나 우유에 40cp의 점도를 초과하지 않도록 하는 양으로 미결정 셀룰로오스/수용성 고분자 복합체와 저강도 한천과 난용성 칼슘화합물을 첨가하고, ②①항에서 얻어진 화합물을 균질화하고, ③ 가열산균하여 칼슘강화 음료를 제조하는 칼슘강화 음료의 제조방법.
  5. 제1항 또는 제2항에 있어서, 젤리강도가 30~200g/㎠인 저강도 한천을 함유하는 칼슘강화 음료.
  6. 제1항 도는 제2항에 있어서, 고순도 목제 펄프를 산이나 알카리로 가수분해하여 얻어진 셀룰로오스 결정 집합물로 구성된 콜로이드상의 미결정 셀룰로오스를 함유하는 칼슘강화 음료.
  7. 제1항 또는 제2항에 있어서, 탄산칼슘, 계란껍질의 칼슘, 유청칼슘, 인산칼슘으로 이루어진 군에서 선택되어진 난용성 칼슘을 함유하는 칼슘강화 음료.
  8. 제1항 또는 제2항에 있어서, 난용성 칼슘화합물이 칼슘으로 환산하여 0.1~0.13%로 함유되고; 콜로이드상의 미결정 셀룰로오스가 0.1~0.2중량%로 함유되고; 저강도 한천이 0.015~0,20중량%로 함유되어진 것을 특징으로 하는 칼슘강화 음료.
  9. 제4항에 있어서, 난용성 칼슘화합물이 칼슘으로 환산하여 0.15중량% 이하로 함유되고; 콜로이드상의 미결정 셀룰로오스가 0.1~0.3중량%로 함유되고; 저강도 한천이 0.015~0.05중량%로 함유되어진 칼슘강화 음료의 제조방법.
  10. 제4항에 있어서, 저강도 한천이 칼슘의 0.1~0.4배로 함유되어진 칼슘강화 음료의 제조방법.
  11. 제4항에 있어서, 젤리강도가 30~200g/㎠ 인 저강도 한천을 함유하는 칼슘강하 음료의 제조방법.
  12. 제4항에 있어서, 고순도 목재 펄프를 산이나 알카리로 가수분해하여 얻어진 셀룰로오스 결정집합물로 구성된 콜로이드상의 미결정 셀룰로오스를 함유하는 칼슘강화 음료의 제조방법.
  13. 제4항에 있어서, 탄산칼슘, 계란껍질의 칼슘, 유청칼슘, 인산칼슘으로 이루어진 군에서 선택되어진 난용성 칼슘을 함유하는 칼슘강화 음료의 제조방법.
  14. 제4항에 있어서, 난용성 칼슘화합물이 칼슘으로 환산하여 0.1~0.13중량%로 함유되고; 콜로이드상의 미결정 셀룰로오스가 0.1~0.2중량%로 함유되고; 저강도 한천이 0.015~0.02중량%로 함유되어진 칼슘강화 음료의 제조방법.
