Claims (8)

  1. 클로스트리듐 종ATCC 39, 251, ATCC 39,252 그의 돌연변이 균주 또는 α-아밀라제효소 생성의 암호인 유전정보를 상기클로스트리듐종미생물로 부터 받은 미생물로 구성된 군으로 부터 선택된 미생물로 부터 유도된 α-아밀라제.
  2. 제1항에 있어서 SDS-폴리아크릴아미드겔 전기영동법에 의해 측정된 분자량이 약 75000±3000인 효소.
  3. 제1항에 있어서 5mMCa++존재하 PH 4.2, 60℃에서의 반감기가 70시간 이상인 요소.
  4. 제1항에 있어서 PH 약 5.0에서 최대 α-아밀라제 활성을 갖는 효소.
  5. 제1항에 있어서 PH 4.5, 85℃에서 최대 α-아밀라제 활성을 갖는 효소.
  6. 클로스트리듐 종ATCC 39, 251, ATCC 39, 252, 그의 돌연변이균주 또는 α-아밀라제 효소생성의 암호인 유전정보를 클로스트리듐 종 미생물로 부터 받은 미생물로 구성된 군으로부터 미생물을 선택한 후, 선택된 미생물세포를 영양배지 내에서 배양하고 배지로부터 α-아밀라제 효소를 단리시키는 것으로 구성된 α-아밀라제효소를 제조하는 방법.
  7. 전분의 수성슬러리 또는 용액을 pH 3.5-7.0에서 제1항의 α-아밀라제효소로 전분 가수분해물 용액이 생성되기에 충분한 시간 동안 처리하는 것으로 구성된 전분을 가수분해하는 방법.
  8. 제7항에 있어서 온도 약 50-100℃, pH 약 4.0-6.0에서 전환을 수행하는 방법.
