Claims (14)
- 전과 피유레를 함유하는 기포 냉동 디저어트 제조시 유용한 하기 성분으로 이루어진 비낙농 조성물 A. 약25∼75중량%의 전과 피유레; B. 약 12∼28%중량의 영양 탄수화물 감미제; C. 조성물의 기포가 약 0.2∼ 0.95 g./cc.의 밀도를 갖게 할수 있는 충분한 산안정성 휘핑제; D. 약 0.05∼0.5중량%의 산안정성 다당류 검; E. 약1∼ 15%의 식용 지방산트리글리세라이드; F. 약 1∼15중량%의 말토 덱스트린부형제; 및 G. 조성물에 수분함량을 약 45∼75%로 제공하는 충분한 량의 물.
- 제1항에 있어서, 휘핑제가 약 0.3∼1.5중량% 존재함을 특징으로 하는 식품 조성물.
- 제2항에 있어서, 본쇄된 과일 피유레가 약 75∼90중량%의 수분함량을 가짐을 특징으로 하는 조성물.
- 제3항에 있어서, 과일 피유레가 균질화됨을 특징으로 하는 조성물.
- 제4항에 있어서, 과일 피유레가 약 25∼45중량%의 양으로 존재함을 특징으로 하는 조성물.
- 제5항에 있어서, 과일 피유레가 25∼40중량%의 양으로 존재함을 특징으로 하는 조성물.
- 제6항에 있어서, 산 안정성 휘핑제가 약 0.4∼6.8%의 양으로 존재하고, 다당류 검이 약 0.1∼0.5%의 양으로 존재하고, 그리고 식용 지방산 트리글리세라이드가 약 6∼10%중량%의 양으로 전재함을 특징으로 하는 조성물.
- 제7항에 있어서, 수분함량이 약 62∼72중량% 범위임을 특징으로 하는 조성물.
- 제8항에 있어서, 다당류검이 로커스트 콩, 구아, 크산탄 및 이들의 혼합물로 이루어진 군으로부터 선택됨을 특징으로 하는 조성물.
- 제9항에 있어서, 감미제가 혼합물의 약 15∼20%의 양으로 존재함을 특징으로 하는 조성물.
- 제10항에 있어서, 말토 덱스트린이 약 4∼6중량%의 양으로 존재함을 특징으로 하는 조성물.
- 제7항에 있어서, 식용 지방산트리글리세라이드가 동결 방지되며 수분함량이 약 62∼72중량%의 범위임을 특징으로 하는 조성물.
- 제9항에 있어서, 지방산의 모노-또는 디글리세라이드, 다가알코올의 지방산 에스테르로 이루어진 군으로부터 선택된 0.05∼0.5중량%의 유화제를 추가로 더 함유함을 특징으로 하는 조성물.
- A. 부드러운 과일 피유레를 만들기 위하여 전과 피스의 입자 크기를 감소시키고; B. 하기 성분의 혼합물을 만들기 위하여 혼합하고; 1) 약 25∼75중량%의 과일 피유레 2) 12∼28중량%의 영양 탄수화물 감미제, 3) 약 0.3∼1.5중량%의 산안정성 휘핑제, 4) 0.05∼0.5중량%의 산안정성 다당류검, 5)약 1∼15중량%의 식용 지방산 트리글리세라이드 6) 약 1∼15중량%의 말토덱스트린 부형제 및 7)수분함량을 45∼75중량%로 하기에 충분한 량의 물; C.디저어트 조성물을 형성하기 위하여 혼합물을 균질화 시키는 일련의 단계로 이루어짐을 특징으로 하는 기포냉동 디저어트 제조시 유용한 조성물의 제조방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
