Claims (25)
- 식품을 동결하는 식품동결방법으로서,상기 동결을 행하기 전 및/또는 상기 동결 중에, 상기 식품 내의 상기 식품을 갈변시키는 효소가 비활성화되는 상태로 하는 것을 특징으로 하는 식품동결방법.
- 제 1항에 있어서,상기 효소가 비활성화되는 상태는 상기 식품의 온도를 상기 식품을 갈변시키는 효소가 비활성화되는 효소비활성온도까지 상승시킴으로써 실현하는 것을 특징으로 하는 식품동결방법.
- 제 1항 또는 제 2항에 있어서,상기 효소는 티로시나제, 폴리페놀옥시다제, 페놀옥시다제의 전부 또는 일부를 포함하는 것을 특징으로 하는 식품동결방법.
- 제 2항에 있어서,상기 효소비활성온도는 80℃ 이상인 것을 특징으로 하는 식품동결방법.
- 제 1항 내지 제 4항 중 어느 한 항에 있어서,상기 식품을 동결 전에 조미료에 침윤시키는 것을 특징으로 하는 식품동결방법.
- 동결한 식품을 해동하는 식품해동방법에 있어서,적어도 상기 해동이 행해지고 있는 동안, 상기 식품 주위의 분위기를 산소가 소정량보다 적어지는 상태로 유지하는 공정을 구비하고,상기 소정량은, 상기 산소를 촉매로 하여 상기 식품을 갈변시키는 효소가 상기 식품을 갈변시키는데 필요한 최소량인 것을 특징으로 하는 식품해동방법.
- 제 6항에 있어서,상기 분위기를 비활성가스를 존재시킴으로써 실현하는 것을 특징으로 하는 식품해동방법.
- 적어도 제 1항 내지 제 5항 중 어느 한 항에 기재된 식품동결방법에 의해 동결한 식품을 해동하는 공정을 구비한 것을 특징으로 하는 동결해동조리방법.
- 동결한 식품을 적어도 제 6항 또는 제 7항에 기재된 식품해동방법에 의해 해동하는 공정을 구비한 것을 특징으로 하는 동결해동조리방법.
- 제 8항 또는 제 9항에 있어서,상기 동결과 상기 해동을 적어도 1회 이상 반복하여 행하는 것을 특징으로 하는 동결해동조리방법.
- 식품을 동결하는 동결수단을 구비하고,상기 동결수단이 동결동작을 행하기 전 및/또는 동결동작 중에, 상기 식품 내의 상기 식품을 갈변시키는 효소가 비활성화되는 상태로 하는 것을 특징으로 하는 식품동결장치.
- 식품을 동결하는 동결수단과,상기 동결수단이 동결동작을 행하기 전 및/또는 동결동작 중에, 상기 식품 내의 상기 식품을 갈변시키는 효소가 비활성화되는 상태로 하는 효소비활성화수단을 구비한 것을 특징으로 하는 식품동결장치.
- 제 12항에 있어서,상기 효소비활성화수단은 상기 동결수단이 동결동작을 행하기 전에 상기 식품의 온도를 상기 식품을 갈변시키는 효소가 비활성화되는 효소비활성온도까지 상승시키는 것을 특징으로 하는 식품동결장치.
- 제 11항 내지 제 13항 중 어느 한 항에 있어서,상기 효소는 티로시나제, 폴리페놀옥시다제, 페놀옥시다제의 전부 또는 일부를 포함하는 것을 특징으로 하는 식품동결장치.
- 제 13항에 있어서,상기 효소비활성온도는 80℃ 이상인 것을 특징으로 하는 식품동결장치.
- 동결한 식품이 수납되는 수납실과, 상기 수납실 내의 탈기를 행하는 탈기수단과, 상기 동결한 식품을 해동하는 해동수단을 구비한 식품해동장치에 있어서,상기 탈기수단은, 적어도 상기 해동이 행해지고 있는 동안 상기 식품 주위의 분위기를 산소가 소정량보다 적어지는 상태로 유지하고,상기 소정량은, 상기 산소를 촉매로 하여 상기 식품을 갈변시키는 효소가 상기 식품을 갈변시키는데 필요한 최소량인 것을 특징으로 하는 식품해동장치.
- 제 16항에 있어서,상기 수납실 내에 비활성가스를 도입하는 비활성가스 도입수단을 구비하고,상기 분위기를 상기 비활성가스를 존재시킴으로써 실현하는 것을 특징으로 하는 식품해동장치.
- 제 11항 내지 제 15항 중 어느 한 항에 기재된 식품동결장치와, 상기 동결이 행해지기 전의 상기 식품을 조미료에 침윤시키는 습윤수단을 구비한 것을 특징으로 하는 동결해동조리장치.
- 제 16항 또는 제 17항에 기재된 식품해동장치와,상기 식품을 동결시키는 동결수단과,상기 동결이 행해지기 전의 상기 식품을 조미료에 침윤시키는 습윤수단을 구비한 것을 특징으로 하는 동결해동조리장치.
- 식품을 동결하여 얻어진 냉동식품으로서,상기 식품은, 상기 식품을 갈변시키는 효소가 비활성화된 효소비활성상태에 있는 것을 특징으로 하는 냉동식품.
- 제 20항에 있어서,상기 효소비활성상태는, 상기 동결을 행하기 전 및/또는 상기 동결 중에 상기 식품 내의 상기 식품을 갈변시키는 효소가 비활성화되는 효소비활성온도까지 가열됨으로써 실현되는 것을 특징으로 하는 냉동식품.
