Claims (4)
- 깐 마늘을 세척 건조 후 대형 믹서기에 믹서하여 마늘 다데기를 만드는 단계; 이와는 별도로 깐 흑마늘을 중탕기에 넣고 깐 흑마늘량의 10%이상 30%이하의 식수를 넣고 80도 이상 130도 이하의 온도에서 장시간 중탕하는 단계; 중탕된 흑마늘을 유압 프레스기를 이용하여 흑마늘 진액을 추출하는 단계; 추출된 흑마늘 진액을 60도 이상의 온도에서 장시간 농축하는 단계; 믹서된 마늘 다데기와 농축된 흑마늘 액을 혼합하는 단계; 혼합된 흑마늘 다데기를 진공포장 하여 영하40도의 온도에서 급 냉하는 단계를 거쳐서 만들어지는 흑마늘 다데기 제조방법.
- 제1항에 있어서,상기 흑마늘 액 농축 단계에서 흑마늘 액의 농도가 50브릭스 이상 90브릭스 이하인 것을 특징으로 하는 흑마늘 다데기 제조방법.
- 제1항에 있어서,상기 마늘 다데기와 농축된 흑마늘 액의 혼합 단계에서 마늘 다데기와 농축된 흑마늘 액의 혼합 중량비가 100:1이상 100:30이하인 것을 특징으로 하는 흑마늘 다데기 제조 방법.
