Abstract
Description
즉, 상기 일반적으로 알려진 추출방법은 추출물 제조탱크에 엄나무를 넣고 물을 투입한 후, 추출물 제조 탱크를 가열하여 물을 끓여서 독성을 제거하여 추출물을 얻는다. 상기와 같은 방법으로 뽕나무 뿌리와 황기의 추출물을 얻는다.
이때 밀가루에 혼합하는 정제물은 일반적으로 칼국수 면을 제조하는 방법과 같이 가수율이 33%∼40%미만이 되게 혼합하여 반죽하면 된다. 즉, 가수율이 50%이상 되면 수제비의 반죽이 되기 때문이다.
Claims (4)
- 엄나무, 뽕나무뿌리 및 황기를 정제하여 만들어진 각각의 정제물을 1 : 1 : 0.5의 혼합비율로 혼합하는 공정과,상기 혼합된 정제물을 이용하여 밀가루를 반죽하는 공정과,상기 반죽을 숙성시킨 후 제면기를 이용하여 면을 형성하는 공정과,상기 면을 육수에 삶으면서 면 1Kg일 때 채로 썰어 놓은 능이버섯은 100∼200g, 장뇌삼은 50∼100g, 대추는 10g, 은행은 10g을 넣어 제조하는 것을 특징으로 하는 면류의 제조방법.
