Claims (6)
- 삶은 당면을 간장으로 간을 하는 단계와,김 상부로 간된 당면, 야채류, 과일류, 고기류 및 해산물류의 혼합물을 적층한 후, 돌돌 감아 원통형으로 겹치게 말아 김말이를 제조하는 단계와,그 김말이 표면에 튀김가루를 입히는 단계와,그 튀김가루를 입힌 김말이를 180 ~ 200℃의 기름에 튀기는 단계를 거쳐 이루어지는 김말이 튀김 제조에 있어서,상기 간된 당면은, 고구마 전분 50 ~ 90wt%와 옥수수 전분 10 ~ 50wt%의 혼합 전분을 이용하여 제조된 당면을 끓는 물에서 5분간 삶은 후, 상온에서 10 ~ 15분간 식히고, 상기 식힌 당면 전체 중량에 대해, 메주, 소금 및 물의 혼합비율이 중량비율로 1:1:4가 되도록 혼합한 후 장독 속에 넣고 30 ~ 40일간 숙성시킨 생간장을 0.5 ~ 3중량%첨가하여 제조된 것임을 특징으로 하는 퓨전 김말이 제조방법.
