Claims (1)
- 【特許請求の範囲】 1.生物−転換の前に、ホップの香味を付与する薬剤を媒体に加える段階と; ホップの香味の飲料を形成するために媒体を生物−転換する段階とからな り、ホップの香味を付与する薬剤はホップ固体の抽出物からなり、ホップ固体は 実質的に全てのアルファ酸、ベータ酸、及びホップ油を取り除くためのホップの 第一の抽出の残さである: 発酵性生育媒体からホップの香味の飲料を製造する方法。 2.ホップの第一の抽出のために二酸化炭素が使用される請求項1記載の方法 。 3.少なくとも一の極性溶媒がホップ固体の抽出に使用される請求項1記載の 方法。 4.ホップ固体から乾燥ホップの香味構成要素を実質的に抽出しないために極 性溶媒は選択される請求項3記載の方法。 5.極性溶媒は水、エタノール、イソプロパノール、メタノール、ジクロロメ タン、トリクロロメタン、n−ブタノール、酢酸エチル、エチレンジクロライド 、及びトリクロロエチレンからなる群より選択される請求項3記載の方法。 6.極性溶媒はエタノールである請求項5記載の方法。 7.極性溶媒は水である請求項5記載の方法。 8.請求項1記載の方法により製造され、透明又は緑色のガラス瓶中で強化さ れた安定性を有するケトル ホップの香味のビール。 9.請求項1記載の方法により製造されたホップの香味の飲料。 10.請求項4記載の方法により製造されたホップの香味の飲料。 11.請求項6記載の方法により製造されたホップの香味の飲料。 12.請求項7記載の方法により製造されたホップの香味の飲料。 13.生物−転換の前に、実質的に全てのアルファ酸、ベータ酸、及びホップ 油を取り除くためのホップの第一の抽出の残さであるホップ固体の抽出物からな る、ホップの香味を付与する薬剤を発酵性生育媒体に加え、ホップの香味の飲料 を形成するために該媒体を生物−転換することにより製造されるホップの香味の 飲料。 14.生物−転換の前に、実質的に全てのアルファ酸、ベータ酸、及びホップ 油を取り除くためのホップの第一の抽出の残さであるホップ固体の抽出物からな るホップの香味を付与する薬剤を発酵性生育媒体に加えることからなる、ホップ の香味の飲料を製造するための醸造方法における改善。 15.実質的に全てのアルファ酸、ベータ酸、及びホップ油を取り除くための ホップの第一の抽出の残さであるホップ固体の抽出物からなる、飲料用のホップ の香味を付与する剤。 16.ホップの香味を付与する薬剤はホップ固体の極性溶媒の抽出物からなる 請求項15記載のホップの香味を付与する剤。 17.媒体を生物−転換する段階と; 実質的に全てのアルファ酸、ベータ酸、及びホップ油を取り除くための ホップの第一の抽出の残さであるホップ固体の発酵された水抽出物からなる、ホ ップの香味を付与する薬剤を該転換された媒体に加える段階とからなる: 発酵性生育媒体からホップの香味の飲料を製造する方法。 18.請求項17記載の方法により製造されたホップの香味の飲料。 19.実質的に全てのアルファ酸、ベータ酸、及びホップ油を取り除くための ホップの第一の抽出の残さであるホップ固体の発酵された水抽出物からなるホッ プの香味を付与する薬剤を、生物−転換された発酵性生育媒体に加えることによ り製造されるホップの香味の飲料。 20.実質的に全てのアルファ酸、ベータ酸、及びホップ油を取り除くための ホップの第一の抽出の残さであるホップ固体の発酵された水抽出物からなるホッ プの香味を付与する薬剤を、生物−転換された発酵性生育媒体に加えることより なる、ホップの香味の飲料を製造する醸造方法における改善。 21.実質的に全てのアルファ酸、ベータ酸、及びホップ油を取り除くための ホップの第一の抽出の残さであるホップ固体の発酵された水抽出物からなる、飲 料用のホップの香味を付与する剤。
