Abstract

"PROCESSOS DE PREPARAçãO DE UMA BEBIDA E DE FABRICAçãO DE CERVEJA, CERVEJA FLAVORIZADA, BEBIDA COM SABOR DE LúPULO E AGENTE FLAVORIZANTE". Processo para a preparação de uma bebidas flavorizadas com sabor pleno de lúpulo empregando-se um agente flavorizador de lúpulo compreendendo um extrato de sólidos de lúpulo, sendo que os sólidos de lúpulo constituem um resíduo de uma primeira extração de lúpulo destinada a remover os ácidos alfa. De preferência, utiliza-se o dióxido de carbono líquido para a primeira extração do lúpulo e um solvente polar, como o etanol e água, que é utilizado para extrair os sólidos de lúpulo. Também se descreve bebidas preparadas de acordo com este processo e, também, novas composições para serem utilizadas no processo.
