Claims (1)
- 【特許請求の範囲】 1. 少なくとも砂糖とトリグリセリド組成物からなり、そのトリグリセリド 組成物は: <8重量%、好ましくは<5重量%、最も好ましくは<2重量%の SSS; 25−80重量%、好ましくは35−75重量%のSUS; 2−40重量%、好ましくは5−20重量%のSU2; >5重量%、好ましくは>10重量%、最も好ましくは15−45 重量%のU3 (ここにおいて、S及びUは、トリグリセリド中の脂肪酸残基であり、 Sは、C16−C24の飽和脂肪酸であり、 Uは、18個以上の炭素原子を有する不飽和脂肪酸で ある) からなる軟質(flexible)アイスクリーム被覆組成物。 2. Sが、炭素原子が16−18個の飽和脂肪酸であり、一方、組成物のト リグリセリド部分のC16:0:C18:0の比が、0.4−0.9の範囲にわたる、請 求項1にかかる軟質アイスクリーム被覆組成物。 3. UがC18:1とC18:2からなり、一方、トリグリセリド部分のSOS:S LnS(O=C18:1;Ln=C18;2)の重量比が、3.0超、好ましくは6.0 超である、請求項1及び2にかかる軟質アイスクリーム被覆組成物。 4. トリグリセリド部分が、次に示されるような温度ごとの固形脂インデッ クス(NMR−パルス:安定化されていない)を示す、請求項1−3にかかる軟 質アイスクリーム被覆組成物: N0>35、好ましくは40−80 N20>5、好ましくは15−60 N26=0−35、好ましくは2−20。 5. 組成物の脂相が、20重量%超、好ましくは30重量%超、特には50 −80重量%のシスー不飽和脂肪酸含有量を有する、請求項1−4にかかる軟質 アイスクリーム被覆組成物。 6. トリグリセリド部分が、天然脂A及びBの、あるいはそれらの分別留分 の混合物であり、それにおいて、脂Aは、SUS−水準が35重量%超、好まし くは70重量%超であり、一方、脂Bは、N20が5未満の液状脂であり、それは 、好ましくは30重量%超の(U2S+U3)−トリグリセリドを含有し、好まし くはU3:U2Sの重量比が1.0超である、請求項1−5にかかる軟質アイスク リーム被覆組成物。 7. 脂A及びBの重量比(即ちA:B)が80:20から40:60の範囲 にわたる、請求項6にかかる軟質アイスクリーム被覆組成物。 8. 脂Aが、パーム油、シア−(shea)、イリッペ、カカオ脂又はそれらの 分別留分から誘導され、且つ、脂Bは、ヒマワリ油、とうもろこし(maize)油 、大豆油、オリーブ油、紅花油、高オレインヒマワリ油及びキャノーラ油からな る群から選ばれる、請求項6−7にかかる軟質アイスクリーム被覆組成物。 9. 脂Aが、C16:0含有量が15重量%超、好ましくは25−75重量%の 天然脂又はその分別留分である、請求項6−8にかかる軟質アイスクリーム被覆 組成物。 10. 25−60重量%の砂糖; 20−70重量%の請求項1で定義されたトリグリセリド組成物; 0−30重量%の、ココア粉末、乳蛋白質、乳糖、乳化剤、及び一又は それ以上の香料(フレーバー)からなる群からの成分の中の少なくとも一つ からなる、請求項1−9にかかる軟質アイスクリーム被覆組成物。 11. アイスクリームが、請求項1−10にかかる組成物で被覆されている、 被覆されたアイスクリーム。 12. コーンが、請求項1−10にかかる組成物で被覆されている、被覆コー ンに入ったアイスクリーム。
