Abstract

L'invention a pour objet un succédané de beurre de cacao qui comprend une composition de triglycérides dans laquelle les radicaux acides gras sont essentiellement des radicaux acide palmitique, stéarique et arachidique, le radical arachidique représentant de 4 à 15 moles % du total des acides gras saturés; les radicaux acides gras insaturés sont essentiellement les radicaux acides oléique et linoléique, la proportion molaire de l'acide linoléique par rapport au total des radicaux acides gras insaturés étant inférieure à 20 %, et les proportions relatives des triglycérides étant dans des gammes bien définies. Application à la fabrication de chocolat.
