Claims (1)
- 【特許請求の範囲】 1.コーヒー豆、カカオ豆またはチコリ根の焙煎方法であって、焙煎前の適当な 処理(例、発酵等)を受けさた生の豆、または任意の植物部位に、5バール以上 の圧力の水蒸気を作用させることを特徴とする焙煎方法。 2.豆等への加圧水蒸気の作用時間が2分以内であることを特徴とする、請求の 範囲第1項記載の焙煎方法。 3.生の豆等に9〜30バールの圧力の水蒸気を作用させることを特徴とする、請 求の範囲第1項または第2項記載の焙煎方法。 4.下記工程を行うことを特徴とする請求の範囲第1項ないし第3項のいずれか 1項に記載の方法。 a) 生の原料を密閉容器に導入し、 b) この容器に加圧水蒸気を導入し、 c) 原料を加圧水蒸気と接触状態に保持し、 d) 容器内を大気圧にするように急速な膨張を行い、 e) 焙煎された生成物を回収する。 5.工程b)を生の原料と水を入れた容器を加熱することにより行うことを特徴 とする請求の範囲第4項記載の方法。 6.工程c)の保持時間が1分以内であることを特徴とする請求の範囲第4項ま たは第5項記載の方法。 7.水蒸気が乾燥水蒸気であることを特徴とする請求の範囲第1項ないし第6項 のいずれか1項に記載の方法。 8.グリッドを通して排気して容器を低圧にすることにより容器内を膨張させて 、膨張時にコーヒーをグリッドにより粉砕することを特徴とする、請求の範囲第 1項ないし第7項のいずれか1項に記載の方法。 9.焙焼後に生成物を乾燥することを特徴とする、請求の範囲第1項ないし第8 項のいずれか1項に記載の方法。
