Abstract
Description
Claims (19)
- 1.低温液体で含浸された多孔性支持体の表面と品物を接触させること、前記低 温液体と前記品物との熱伝達によって品物を完全に又は部分的に冷凍すること、 次いで完全に又は部分的に冷凍された品物を回収することを特徴とする、品物を 完全に又は部分的に冷凍する方法。
- 2.多孔性支持体が、毛管現象又は表面張力によって低温液体を保持することを 特徴とする請求の範囲第1項記載の方法。
- 3.多孔性支持体が、動かすことができることを特徴とする請求の範囲第1項又 は第2項記載の方法。
- 4.多孔性支持体が、コンベヤーであることを特徴とする請求の範囲第3項記載 の方法。
- 5.多孔性支持体が、金属製又は複合材料製の細かい目の格子であることを特徴 とする請求の範囲第1項から第4項のいずれか1項に記載の方法。
- 6.多孔性支持体が、合成又は天然ポリマーの織布又は不織布でつくられること を特徴とする請求の範囲第1項から第4項のいずれか1項に記載の方法。
- 7.前記合成ポリマーが、ポリエステルであることを特徴とする請求の範囲第6 項記載の方法。
- 8.合成ポリマー織布が、モノフィラメントからなることを特徴とする請求の範 囲第6項又は第7項記載の方法。
- 9.多孔性支持体が、直径が0.001mmと5mmとの間、好ましくは0.0 1mmと2mmとの間にある孔を有することを特徴とする請求の範囲第1項から 第8項のいずれか1項に記載の方法。
- 10.低温液体が、液体窒素であることを特徴とする請求の範囲第1項から第9 項のいずれか1項に記載の方法。
- 11.多孔性支持体が、低温液体の噴霧か流下によって、ポンプによる低温液体 の押し上げによって、又は低温液体を横切る通過によって、低温液体で含浸され ることを特徴とする請求の範囲第1項から第10項のいずれか1項に記載の方法 。
- 12.品物が、多孔性支持体と接触した面を堅くされることを特徴とする請求の 範囲第1項から第11項のいずれか1項に記載の方法。
- 13.品物が、低温液体の噴霧又は流下によって、その表面の少なくとも他の一 つの面を堅くされることを特徴とする請求の範囲第11項又は第12項記載の方 法。
- 14.品物が、液体食品、若しくは好ましくはペースト状又は固体食品であるこ とを特徴とする請求の範囲第1項から第13項のいずれか1項に記載の方法。
- 15.ケーシング(2)によって隔てられた多孔性材料製のコンベヤー(1)、 並びに前記コンベヤー(1)を低温液体で含浸する手段(3)を有することを特 徴とする品物の冷凍装置。
- 16.前記多孔性材料が、合成材料、好ましくはポリエステルの織布、又は天然 ポリマーの織布であることを特徴とする請求の範囲第15項記載の装置。
- 17.コンベヤー(1)が、品物が配置されているその長さの全部又は一部を、 隙間のない及び/又は格子の形状をしている支持板(4)によって支えられるこ とを特徴とする請求の範囲第15項又は第16項記載の装置。
- 18.前記装置が、主として、含浸手段(3)に接続された液槽(5)及びポン プ(7)からなる、過剰な低温液体を回収し循環する手段をさらに有することを 特徴とする請求の範囲第15項から第17項のいずれか1項に記載の装置。
- 19.支持板(4)が、液槽も構成することを特徴とする請求の範囲第15項か ら第17項のいずれか1項に記載の装置。
