Description
【発明の詳細な説明】
［産業上の利用分野］
本発明は表面に凹凸のある様な立体型食品の製造に関す
る。

従来、表面に凹凸のある様な立体型食品の製造はプレス
法によるか、あるいは平板を成型後その上にデコレーシ
ョンすることにより行われていた。しかしながら、これ
らの方法は生産性が低く連続大量生産には不通である。

一方、遵統犬量生産可能な生産性の高い方法としてはド
ラム型成型機を用いる方法が知られている。この方法で
は、張設されたピアノ線やカットベルトにより、成型さ
れて型枠から押し出された食品を成型機から切り離して
いる。そのため切り離された食品はすべて平板状になり
、表面に凹凸のある様な立体型食品の成型は不可能であ
る。

消費者のニーズの多様化に伴い、バラエティ−に富んだ
形状の食品が望まれている折、多様な形状を具現し得る
立体型食品を安定した品質で連続的に大量生産すること
が望まれている。

［発明が解決しようとする課題］
本発明はかかる課題を解決しようとするものであり、そ
の目的とするところは立体型食品を安定した品質で連続
的に大量生産する方法を提供することである。さらに詳
しくはドラム型成型機を用いて立体型食品を製造する方
法を提供することである。

［課題を解決するための手段］
本発明者らは立体型食品をドラム成型により成型するに
際し、テフロン加工した型枠に、穀物粉を散布するかま
たは食用油脂を塗布した後、被成形食品素材を充填、成
型し、次いで成型された食品を圧縮空気によりドラム面
から剥離させることにより立体型食品を安定した品質で
連続的に大量生産することができることを見出し、この
知見に基づいて本発明を完成するに至った。

本発明における「テフロン加工」とは固体被膜潤滑材と
してのフッ素樹脂をコーティングされていればよく、そ

本発明における穀物粉は、小麦粉、米粉、各種澱粉等の
いわゆる打ち粉として使用される粉体なら何でもよい。

本発明における食用油脂はサラダ油等の植物油、勧物詔
等であり、これらの油脂は海面活性剤等の添加物を含有
していてもよい。

た空気を、断面が矩形あるいは丸型のノズルからｍｔ出

通常のステンレス製の型枠を用いた場合、ドラム成型機
を用いて成型した立体型食品を型枠から剥離する際、圧
縮空気の吹き付は風圧を相当強くしなければ成型食品を
型枠から剥離することができない、ところが、剥離可能
な程度の風圧を加えると成型された食品の一部がちぎれ
てしまい、成型品の全てが部分的に欠損した状態になり
、完全な成型品が得られない、テフロン加工した型枠を
用いた場合も、約７５％の成型品が一部欠損した状態に
なる。

型枠では約６６％の成型品が一部欠損品であったが、テ
フロン加工した型枠では一部欠損品の割合は０％となる
。型枠に食用油脂を塗布した場合、ステンレス製の型枠
では約６１％が一部欠損品であったが、テフロン加工し
た型枠では一部欠損品は０％となる。

［実施例］
以下に本発明の実施例を図面に基づいて説明する。
実施例１
第１図に示すように、打ち粉ホッパー１から澱粉を、テ
フロン加工されたドラム型枠４上に散布する。被成型素
材ホラ パー２から、ドラム３に設置された型枠４に被成型素材
（例： マツシュポテト）を押し入れた後、ドラムを回
転さセる。型枠４がドラム３の最下点を通過する頃より
成型素材６が型枠４より押し出される。該成型素材をノ
ズル５より圧縮空気を連続あるいは間断的に噴出させて
成型素材６を型枠４から剥離させる。剥離された成型素
材をベルトコンベア７により搬送して目的の成型品２０
０個を得た。第１表に示すように、欠損品はなく品質の
安定した成型食品が得られた。

実施例２
テフロン加工されたドラム型枠に澱粉を散布する代わり
にサラダ油を塗布して実施例１と同様の実験を行った。

本発明によれば表面に凹凸を有する様な立体型食品を、
ドラム成型後を用いて、欠損品を出すことなく連続的に
大量生産できる。

Claims (1)
- （１）立体型食品をドラム成型により製造するに際し、
テフロン加工された型枠に、穀物粉を散布するかまたは
食用油脂を塗布した後、被成形食品素材を充填、成型し
、次いで成型された食品を圧縮空気によりドラム面から
剥離させることを特徴とする立体型食品の製造方法
