Description
一、発酵品質を把握できないこと
ニンニクが膜除去する過程において他の細菌が付着しやすく、ニンニクに付着した細菌がニンニクの発酵過程に影響を与え、ニンニク発酵の品質を把握できないことを引き起こす。
二、焦げ臭を生成すること
ニンニク発酵物を蒸留抽出する時に、ニンニク発酵物における固体成分が焦げて炭化しやすく、ニンニク抽出物が焦げ臭を出すことを引き起こす。
三、強いニンニク臭
複数のニンニクを発酵させた後に大量のアリシンを生成し、アリシンはニンニク臭を生成し、ある人はニンニク臭に抵抗してニンニク発酵液を使用して製造された製品を拒否する。
複数のニンニクの膜を除去する膜除去ステップ、
オゾン水を利用して該複数のニンニクを滅菌する滅菌ステップ、
該複数のニンニクを水切りする水切りステップ、
該複数のニンニクを発酵させることにより、ニンニク発酵物を取得する発酵ステップ、
該ニンニク発酵物を濾過することにより、ニンニク発酵液を取得する第1濾過ステップ、及び
該ニンニク発酵液を抽出することにより、ニンニク抽出物を取得する抽出ステップ、を含む。
一、焦げ臭が発生しないこと
本願は該抽出ステップ906の前に該第1濾過ステップ905を実行し、スクリーン又はフィルタエレメントを利用して該ニンニク発酵物を濾過することにより、該ニンニク発酵物における固体成分を除去し、該抽出ステップ906で該ニンニク発酵物中の固体を焦げて焦げ臭を生成し、さらに該ニンニク抽出物の品質に影響を与えることを効果的に回避することができる。
二、発酵品質の安定
本願は該発酵ステップにおいて904において各成分を定量し、該ニンニクの発酵時間を固定し、かつまず好気性発酵を実行して無酸素発酵を実行し、ニンニクの発酵品質を効果的に安定させることができる。さらに該滅菌ステップ902においてオゾン水を用いてニンニクの表面に付着した細菌を除去し、複数のニンニクの発酵作業をより安定的に制御することができる。
三、ニンニク臭の調整
該消臭ステップ908において、活性炭フィルタエレメントを利用して該ニンニク抽出物のニンニク臭を調整し、消費者が強いニンニク臭のため該ニンニク抽出物を使用して製造された製品を拒否することを回避することができる。
Claims (5)
- 複数のニンニクを膜除去する膜除去ステップ、
オゾン水を利用して該複数のニンニクを滅菌する滅菌ステップ、
該複数のニンニクを水切りする水切りステップ、
該複数のニンニクを発酵させることにより、ニンニク発酵物を取得する発酵ステップ、
該ニンニク発酵物を濾過することにより、ニンニク発酵液を取得する第1濾過ステップ、
蒸留を利用して、抽出温度を80℃~90℃として、該ニンニク発酵液を抽出することにより、ニンニク抽出物を取得する抽出ステップ、及び、
活性炭を有するフィルタエレメントを使用して該ニンニク抽出物を濾過し、該ニンニク抽出物から鼻をつくニンニク臭を除去する除臭ステップ、
含み、
該滅菌ステップにおいて、該オゾン水の濃度は0.3ppm~0.7ppmであり、かつ複数のニンニクを該オゾン水に5分間~15分間浸漬すること、
該発酵ステップにおいて、発酵サイクルの前半1/4で、該ニンニク発酵物を通気させ、該ニンニク発酵物を撹拌して好気性発酵を行い、発酵サイクルの後半3/4で、該ニンニク発酵物を密封し、該ニンニク発酵物が外部空気と接触することを回避し、無酸素発酵を行うこと、
を特徴とするニンニク抽出物の製造方法。 - 該発酵ステップにおいて、アセトバクター属酢酸菌、水及び糖を利用して、該複数のニンニクを発酵させることを特徴とする請求項1に記載のニンニク抽出物の製造方法。
- 該発酵ステップにおいて、該複数のニンニク、該糖質、該水及び該アセトバクター属酢酸菌の重量比率は180:30:280:0.1であることを特徴とする請求項2に記載のニンニク抽出物の製造方法。
- 該第1濾過ステップにおいて、まず粗濾過網で濾過し、次に細濾過網で濾過することを特徴とする請求項1に記載のニンニク抽出物の製造方法。
- 該抽出ステップの後の第2濾過ステップをさらに含み、該ニンニク抽出物を濾過することを特徴とする請求項1に記載のニンニク抽出物の製造方法。
