Description
本出願は、2015年10月5日に出願された米国仮特許出願第62/237,297号の優先権を主張するものであり、その全内容を本明細書の一部を構成するものとしてここに援用する。
本発明は、全体として天然着色料に関する。さらに本開示は、天然着色料の製造プロセスに関する。さらに本開示は、天然着色料を最適化するプロセスに関する。
現在、人工的に着色された食品の摂取や人工的に着色された化粧品の使用を厭わないという人は減りつつあり、その結果として天然着色料市場が着実に成長している。Wuらに付与された米国特許第8,557,319号(その全内容を本明細書の一部を構成するものとしてここに援用する)に述べられているように、最初に商業的に実現した天然の青色のうちの幾つかはクチナシ果実(ガーデニア・ジャスミノイデス(Gardenia jasminoides))に由来するものである。しかし、クチナシ青は現在、米国および欧州市場では入手することができず、食品および薬物用途に安全な着色料として入手できるのはアジアの一部の市場に限られている。
一実施形態においては、第1級アミン含有化合物と反応させた、ゲニピン、精製ゲニピン、ゲニピン前駆体(pre-genipin)化合物、イリドイド化合物、ゲニピン誘導体、ゲニピン含有物質およびこれらの任意の組合せからなる群から選択される原料を含む天然着色料を開示する。
一実施形態において、本発明は、第1級アミン含有化合物と反応させた、ゲニピン、ゲニピン前駆体化合物、イリドイド化合物、ゲニピン誘導体、ゲニピン含有物質およびこれらの任意の組合せからなる群から選択される原料を含む天然着色料に関する。さらなる実施形態において、第1級アミン含有化合物はアミノ酸である。
Claims (25)
- 天然着色料の製造プロセスであって:
第1級アミン含有化合物を、ゲニピン、精製ゲニピン、イリドイド化合物、ゲニピン含有化合物およびこれらの任意の組合せからなる群から選択される原料と混合し、それによってブレンド物を生成することと、
前記ブレンド物を加熱し、それによって前記天然着色料を生成することと、
を含み、
前記原料は、全果実、果汁、果実ピューレ、果汁濃縮物、果実由来の乾燥粉末、汁液由来の乾燥粉末、果実の水不溶分、これらの任意の誘導体およびこれらの任意の組合せからなる群から選択される形態にあり、
前記第1級アミン含有化合物が、アミノ酸であり、
前記アミノ酸が、イソロイシンおよびアラニンの組み合わせであり、
前記イソロイシンの量が70~90%であり、前記アラニンの量が10~30%である、プロセス。 - 前記ゲニピン含有化合物が、チブサノキ(Genipa americana)、チブサノキ(Genipa americana)の近縁種の果実およびこれらの任意の組合せからなる群から選択される、請求項1に記載のプロセス。

- 前記ブレンド物の2回目の前記加熱が、50~80℃の温度で実施される、請求項13に記載のプロセス。
- 前記天然着色料を濃縮することをさらに含む、請求項1に記載のプロセス。
- 前記アミノ酸、前記原料、前記天然着色料、およびこれらの任意の組合せからなる群に水を添加することをさらに含む、請求項1に記載のプロセス。
- 前記ブレンド物に酵素を添加することをさらに含む、請求項1に記載のプロセス。
- 前記酵素がβ-グルコシダーゼである、請求項18に記載のプロセス。
- 前記天然着色料のpHを調整することをさらに含む、請求項1に記載のプロセス。
- 前記天然着色料の前記pH調整が、塩基、酸およびこれらの任意の組合せからなる群から選択される化合物を前記天然着色料に添加することにより達成される、請求項20に記載のプロセス。
- 前記天然着色料の前記pH調整が、前記アミノ酸の添加後、加熱後およびこれらの任意の組合せからなる群から選択される時点で行われる、請求項20に記載のプロセス。
- 前記天然着色料の前記pH調整が、前記プロセス全体を通して連続的に行われる、請求項20に記載のプロセス。
- 前記透過液が、ゲニピン、精製ゲニピン、イリドイド化合物、前記ゲニピン含有化合物からなる群から選択される前記原料;前記第1級アミン含有化合物;前記ブレンド物;およびこれらの任意の組合せからなる群から選択される成分と混合される、請求項11に記載のプロセス。
- 前記プロセスが有酸素状態で行われる、請求項1に記載のプロセス。
