となる。したがって、乾燥唐辛子の質量が0.3gであれば、乾燥唐辛子を生換算した質量=0.3(g)×3.648=1.0944(g)となる。

表1に示す割合で各原料を混合し、乾燥唐辛子と、パプリカ、ピーマン、又はトマトの生の果実の粉砕物(以下、ピューレという)とを含有するソースを製造した。
<結果>
結果を表1に示した。パプリカ(ナス科トウガラシ属)ピューレを使用したソースの評価は「◎」(実施例1)、ピーマン(ナス科トウガラシ属)ピューレを使用したソースの評価は「△」(実施例2)、トマト(ナス科ナス属)ピューレを使用したソースの評価は「×」(比較例1)であった。
乾燥唐辛子と果実の粉砕物との配合割合を検討した。

表2に示す割合で各原料を混合し、乾燥唐辛子と、パプリカピューレとを含有するソースを製造した。

表4に示す割合で各原料を混合し、乾燥唐辛子とパプリカピューレを含有するソースを製造し、pHについてはpHメータ(東亜ディーケーケー社、型番HM-25G)により、Awについては水分活性測定装置(AQUA LAB社、型番 Series4TEV)を用いて測定した。
<結果>
結果を表4に示した。pHが4.3〜4.4であり、Awが0.82〜0.87であるソース(実施例18〜実施例21)の評価は「◎」であった。また、pHが4.3であり、Awが0.87であるソース(実施例17)の評価は「△」であった。一方、pHが5.9であり、Awが0.71であるソース(比較例3)の評価は「×」であった。
Claims (5)
- 乾燥唐辛子と、生のパプリカの果実の粉砕物と、塩と、有機酸と、糖類とを含有することを特徴とする唐辛子ソース。
- 前記乾燥唐辛子を生換算した質量と、前記生のパプリカの果実の粉砕物の質量との比が、1:1〜1:11である、請求項1に記載の唐辛子ソース。
- 更に、塩蔵唐辛子を含有する、請求項1又は2に記載の唐辛子ソース。
- pHが3.3〜5.0であり、水分活性(Aw)が0.75〜0.93である、請求項1〜3のいずれか1項に記載の唐辛子ソース。
- 更に、ニンニクを含有する、請求項1〜4のいずれか1項に記載の唐辛子ソース。
