Claims (6)
- レシチン、および食用油が、抗酸化剤としてポリフェノール成分を含有するオリーブ葉抽出液と混合されてなり、且つ、前記レシチンの含量は1〜5%(w/w)、前記食用油の含量は24〜73%(w/w)、前記オリーブ葉抽出液の含量が22〜75%(w/w)である抽出液乳化油(但し、前記レシチンの含量、前記食用油の含量、および、前記オリーブ葉抽出液の含量の総和は100%(w/w)を越えない。)。
- 前記食用油は、大豆油、キャノーラ油、トウモロコシ油、オリーブ油、ひまわり油、および玄米油からなる群より選択されるいずれかであることを特徴とする、請求項1に記載の抽出液乳化油。
- 請求項1に記載の抽出液乳化油が、10〜1,000ppmの濃度で大豆油に添加されたクッキングオイル。
- 請求項1に記載の抽出液乳化油が、10〜2,000ppmの濃度でキャノーラ油に添加されたクッキングオイル。
- オリーブ葉抽出液を準備する工程;
オリーブ葉抽出液をレシチンと食用油と混合して抽出液乳化油を製造する工程;を含む、前記レシチンの含量は1〜5%(w/w)、前記食用油の含量は24〜73%(w/w)、前記オリーブ葉抽出液の含量が22〜75%(w/w)である抽出液乳化油の製造方法(但し、前記レシチンの含量、前記食用油の含量、および、前記オリーブ葉抽出液の含量の総和は100%(w/w)を越えない。)。 - 請求項5に記載の製造方法により抽出液乳化油を製造し、これを10〜1,000ppmの濃度で大豆油に添加するか、または10〜2,000ppmの濃度でキャノーラ油に添加することを特徴とする、クッキングオイルの製造方法。
