Description
Claims (1)
- 米粒の細胞膜を加水分解し又は軟化させるヘミセルラーゼ、ペクチナーゼ、ペクチンエステラーゼ等の酵素含有水溶液に適宜時間米粒を浸漬した後、乾燥並びに微細粉化して製出した微細米粉を重量割合で70%、加工デンプンを18.6%に、デキストリン6重量%、グルコース1.6重量%、増粘多糖類3重量%、アルギン酸エステル0.3重量%、グルコマンナン0.5重量%を均一に混合してなることを特徴とする機械製麺用米麺粉。
