Description
少なくとも一つの高甘味度甘味料、及び
少なくとも一つの消泡剤、
ここで、少なくとも一つの高甘味度甘味料が親水性構造部分及び疎水性構造部分を含む。
親水性−親油性の均衡=20xMh/M (i)、
上記式において、Mhは分子の親水性領域の分子質量であり、Mは全分子の分子質量であり、結果は0ないし20の尺度に提供される。0の親水性−親油性の均衡値は、完全に親油性/疎水性分子に相応し、20の値は完全に親水性/疎油性分子に相応する。一般的に、10以下の値は脂溶性(水不溶性)分子に相応する。
更なる実施形態において、甘味組成物は風味増強剤をさらに含めることができ、ここで、
風味増強剤は、その甘味閾値未満の量で用いられる高甘味度甘味料であり、
高甘味度甘味料は、親水性構造部分及び疎水性構造部分を含む。
試験された製品は、下記表6に列挙されている。PFSは剤形Aを示す。
Claims (15)
- 甘味組成物であって、
羅漢果抽出物及びステビオールグリコシドを含む少なくとも一つの高甘味度甘味料、
ポリジメチルシロキサン及び/又は二酸化ケイ素を含む少なくとも一つの消泡剤、及び
スクロースである栄養性甘味料を含む、甘味組成物。 - 組成物が、シロップ、粉末形態、錠剤形態、顆粒又は溶液として剤形化される、請求項1に記載の組成物。
- 請求項1又は請求項2に記載の組成物を含む、人間及び/又は動物の消費用製品。
- 食品、飲料製品、薬品、栄養製品、スポーツ製品又は美容製品である、請求項3に記載の製品。
- 食品である、請求項4に記載の製品。
- 製品が菓子製品、デザート製品、シリアル製品、製菓製品、冷凍乳製品、肉類、乳製品、調味料、スナックバー、スープ、ドレッシング、ミックス、調理食品、離乳食、ダイエット製剤、シロップ、食品コーティング剤、フロスティング、乾果、ソース、グレービー及びジャム/ゼリーからなる群より選択される、請求項5に記載の製品。
- 飲料製品である、請求項4に記載の製品。
- 飲料製品が、濃縮飲料ミックス、炭酸飲料、無炭酸飲料、果物味飲料、フルーツジュース、お茶、牛乳、コーヒー並びにこれらの組み合わせからなる群より選択される;並びに/又は
飲料製品が栄養性甘味料を5000ppm未満の濃度で含む;並びに/又は
飲料製品内の栄養性甘味料の濃度が80ppm以上である;並びに/又は
飲料製品が酸性pHを有するか若しくはpHが2.0〜6.5である、
請求項7に記載の製品。 - ポリジメチルシロキサンを含み、ポリジメチルシロキサンの量が飲料の10ppm以下である、請求項7又は請求項8に記載の製品。
- 高甘味度甘味料のみを含む製品に比べて甘味開始時間及び/又は甘味遅滞が短縮される、請求項3ないし請求項9のいずれか一項に記載の製品。
- 羅漢果抽出物及びステビオールグリコシドを含む少なくとも一つの高甘味度甘味料単独に比べて前記少なくとも一つの高甘味度甘味料の甘味開始時間及び/又は甘味遅滞を短縮させるためのポリジメチルシロキサン及び/又は二酸化ケイ素を含む少なくとも一つの消泡剤の使用。
- 少なくとも一つの消泡剤がポリジメチルシロキサンである、請求項11に記載の使用。
- 少なくとも一つの高甘味度甘味料:少なくとも一つの消泡剤の比率が重量を基準として2:1〜300:1、8:1〜250:1、20:1〜150:1、又は40:1〜100:1である、請求項11又は請求項12に記載の使用.
- 請求項1又は請求項2に記載の甘味組成物の製造方法であって、
羅漢果抽出物及びステビオールグリコシドを含む少なくとも一つの高甘味度甘味料をポリジメチルシロキサン及び/又は二酸化ケイ素を含む少なくとも一つの消泡剤、及びスクロースである栄養性甘味料と混合するステップを含む、方法。 - 一つ以上の風味増強剤を少なくとも一つの高甘味度甘味料、少なくとも一つの消泡剤及び栄養性甘味料と混合するステップをさらに含み、
前記混合は、少なくとも一つの高甘味度甘味料と少なくとも一つの消泡剤の混合と同時に行われるか、又は、
少なくとも一つの高甘味度甘味料と少なくとも一つの消泡剤の混合後に順次に行われ、
風味増強剤は、その甘味閾値未満の量で用いられる高甘味度甘味料である、請求項14に記載の方法。
