Description
(1)食用油脂を20〜70質量%、ソルビタン脂肪酸エステルを5〜35質量%、レシチンを5〜35質量%、炭酸マグネシウム及び/又は炭酸カルシウムを5〜25質量%含有することを特徴とする豆乳及び豆腐用消泡剤、
(2)更に、グリセリン脂肪酸エステルを0.1〜10質量%含有することを特徴とする前記(1)に記載の豆乳及び豆腐用消泡剤、
(3)グリセリン脂肪酸エステルがポリグリセリン縮合リシノール酸エステルであることを特徴とする前記(2)に記載の豆乳及び豆腐用消泡剤、
からなっている。
本発明の豆乳及び豆腐用消泡剤は、更にグリセリン脂肪酸エステルを含有すると、その効果がより一層高まる。
(1)原材料
1)コメサラダ油(ボーソー油脂社製)
2)ソルビタンモノオレエート(商品名:ポエムO−80V;理研ビタミン社製)
3)ソルビタンモノステアレート(商品名:ポエムS−60V;理研ビタミン社製)
4)レシチン(商品名:レシチンDX;日清オイリオグループ社製)
5)炭酸マグネシウム(商品名:炭酸マグネシウムR;富田製薬社製)
6)炭酸カルシウム(商品名:ポアカル−N;白石カルシウム社製)
7)ポリグリセリン縮合リシノール酸エステル(商品名:ポエムPR−300;理研ビタミン社製)
上記原材料を用いて調製した豆乳及び豆腐用消泡剤(以下、単に「消泡剤」ともいう。)の配合組成を表1に示した。この内、消泡剤1〜8は本発明に係る実施例であり、消泡剤9〜13はそれに対する比較例である。
表1に示した原材料の配合に基づき、消泡剤1〜13各200gを調製した。先ず、300mL容ガラス製ビーカーに、炭酸マグネシウム及び/又は炭酸カルシウム以外の原料を入れ、ガラス棒で撹拌しながら65℃まで加温して溶解した。次いで、得られた溶解液をTKホモミキサー(プライミクス社製)を用いて8000rpmで撹拌しながら、これに炭酸マグネシウム及び/又は炭酸カルシウムを加えて均一に分散した。得られた分散液を室温まで冷却し、本発明の豆乳及び豆腐用消泡剤を得た。
生大豆8kgを30kgの水道水に14時間浸漬し、水切りした。水切り後の浸漬大豆に全量が40kgとなるように水を加えながら、グラインダーで浸漬大豆を摩砕し、「呉」を調製した。「呉」を煮釜に入れ加熱し、102℃に到達後30秒間蒸煮した。蒸煮後の「呉」を脱水機(型式:アトムMTS−SP1;丸井工業社製)を用いて豆乳とおからに分離し、豆乳を得た。尚、摩砕から蒸煮までの一連の操作は、小型豆乳プラント(ミニホープS;高井製作所社製)を用いて実施した。
次いで、前述の操作により得られた豆乳に、消泡剤1〜13を各0.05質量%添加し試験試料とした。試験試料を90℃まで加熱し、加熱後の試料100gをフードミル(HL2053;フィリップス社製;容器容量約200mL)で5秒間撹拌し、撹拌を停止してから3分後の泡の高さを測定した。また、対照として、消泡剤を添加せずに同様に試験試料を調製し、同様に泡の高さを測定した。対照の泡の高さと消泡剤1〜13を添加した場合の泡の高さの差を求め、以下の基準に従い記号化した。結果を表2に示す。
◎:極めて良好 泡の高さの差が5mm以上
○:良好 泡の高さの差が4mm以上5mm未満
△:やや悪い 泡の高さの差が2mm以上4mm未満
×:悪い 泡の高さの差が2mm未満
Claims (3)
- 食用油脂を40〜60質量%、構成脂肪酸がステアリン酸及び/又はオレイン酸であるソルビタン脂肪酸エステルを5〜35質量%、レシチンを5〜35質量%、炭酸マグネシウム及び/又は炭酸カルシウムを5〜25質量%含有し、シリコーン樹脂の含有量が0.05質量%以下であることを特徴とする豆乳及び豆腐用消泡剤。
- 更に、グリセリン脂肪酸エステルを0.1〜10質量%含有することを特徴とする請求項1に記載の豆乳及び豆腐用消泡剤。
- グリセリン脂肪酸エステルがポリグリセリン縮合リシノール酸エステルであることを特徴とする請求項2に記載の豆乳及び豆腐用消泡剤。
