Claims (1)
- 食品の低圧雰囲気真空調理用に構成されたユニット式真空フライヤであって、
気密シールされた細長い調理トンネルを有し、前記調理トンネルは、水平面に沿って上フード部分と下ベース部分とに分離可能であり、
さらに、前記上フード部分を前記下ベース部分から持上げる持上げ手段を有し、前記持上げ手段は、メンテナンス及び清掃のために、前記調理トンネルの内部への容易なアクセスを可能にするのに使用され、
さらに、前記上フード部分及び前記下ベース部分の接合面に配置され、前記調理トンネル内の真空状態の形成及び解放に応じてシールを形成したり解除したりするように作動可能な真空シール手段と、
前記調理トンネル内に配置され、真空状態下の食品を、選択された調理油温度、真空チャンバ圧力及び調理時間で調理するように連続的に作動可能な食品フライヤ手段と、を有し、
前記調理トンネルは、製品入口端部及び製品排出端部を有し、
さらに、製品の進入及び排出を最小の空気の侵入で可能にするのに使用され、且つ、前記入口端部及び前記排出端部の各々に配置された気密ロック部と、
前記調理トンネルと連通した真空装置と、を有し、前記真空装置は、調理状態の食品によって発生した蒸気を除去すること、及び、蒸気を前記トンネルから−14psi(−96.5kPa)程度の負圧まで排気することを連続して行う、ユニット式真空フライヤ。
