German Collection of Microorganisms and Cell Cultures (DSMZ)に受入番号DSM24651で供託されたラクトバチルス・パラカゼイ(Lactobacillus paracasei)CHCC12777;
本明細書中で使用されたとき、「乳酸菌」は、糖の発酵において主に生産される酸として乳酸を含む酸を生産する、グラム陽性微小好気性又は嫌気性細菌を指す。産業上最も有用な乳酸菌は、ラクトコッカス亜種(Lactococcus spp.)、ストレプトコッカス亜種(Streptococcus spp. )、ラクトバチルス亜種(Lactobacillus spp. )、ロイコノストック亜種(Leuconostoc spp. )、シュードロイコノストック亜種(Pseudoleuconostoc spp. )、ペディオコッカス亜種(Pediococcus spp. )、ブレビバクテリウム亜種(Brevibacterium spp. )、エンテロコッカス亜種(Enterococcus spp.)を含む「ラクトバチラレス(Lactobacillales)」目に属する。これらは、単独で、又は他の乳酸菌と組み合わせて、食品用培養株としてしばしば使用される。

ラクトバチルス・ラムノサス(Lactobacillus rhamnosus)CHCC14226を単一株として用いた場合の、P・ブレヴィコンパクツム(P. brevicompactum)、P・コミューン(P. commune)、アスペルギルス・ヴェルシコロール(A. versicolor)及びP・クルストスム(P. crustosum)に対する阻害作用を視覚的に試験するために、脂肪分1.5%のヨーグルトを調製した。
出発培養株YF−L901のみ(上段)、又は出発培養株及びHOLDBAC(商標) YM−B培養株(中段)を用いて発酵させた乳から作製されたヨーグルト上で、活発に増殖したことを示す。対照的に、乳の発酵の過程でラクトバチルス・ラムノサス(Lactobacillus rhamnosus)CHCC14226が存在していた場合、試験された全てのカビにおいて、増殖の阻害が確認された。
ラクトバチルス・パラカゼイ(Lactobacillus paracasei)CHCC12777を単一株として用いた場合の、K.ラクティス(K. lactis)に対する阻害効果を定量的に試験するため、トバログが調製された。
ラクトバチルス・ラムノサス(Lactobacillus rhamnosus)CHCC12697を単一株として用いた場合の、K.ラクティス(K. lactis)に対する阻害効果を定量的に試験するため、トバログが調製された。
ラクトバチルス・ラムノサス(Lactobacillus rhamnosus)CHCC14226を単一株として用いた場合の、デバロマイケス・ハンセニイ(Debaromyces hansenii)に対する阻害効果を定量的に試験するため、ヨーグルトが調製された。

Claims (13)
- 1つ以上のラクトバチルス・ラムノサス(Lactobacillus rhamnosus)株及びラクトバチルス・パラカゼイ(Lactobacillus paracasei)株を含有し、当該1つ以上のラクトバチルス・ラムノサス(Lactobacillus rhamnosus)株が、受入番号DSM24616のラクトバチルス・ラムノサス(Lactobacillus rhamnosus)CHCC12697、及び受入番号DSM24652のラクトバチルス・ラムノサス(Lactobacillus rhamnosus)CHCC14226からなる群から選択され、当該ラクトバチルス・パラカゼイ(Lactobacillus paracasei)株が、受入番号DSM24651のラクトバチルス・パラカゼイ(Lactobacillus paracasei)CHCC12777である、抗微生物組成物。
- 以下の群:

- 果物及び果物由来の製品、野菜及び野菜由来の製品、穀物及び穀物由来の製品、乳製品、獣肉、鶏肉及び海産物並びにそれらの混合物からなる群から選択される、請求項5に記載の食料製品。
- 請求項1又は2のいずれかに記載の組成物を含有する単位投与剤形である、請求項5に記載の医薬製品。
- 請求項5〜7のいずれか1項に記載の食料、飼料又は医薬製品を製造する方法であって、請求項1又は2のいずれかに記載の抗微生物組成物が当該食料、飼料又は医薬製品に添加される工程を含む、当該製造方法。
- 請求項8に記載の製造方法であって、
(a)前記食料、飼料又は医薬製品の製造の過程で、請求項1又は2のいずれかに記載の抗微生物組成物を、1つ以上のラクトバチルス・ラムノサス(Lactobacillus rhamnosus)株又は1つ以上のラクトバチルス・パラカゼイ(Lactobacillus paracasei)株が、当該食料、飼料又は医薬製品に対して1x106cfu/g以上又は1x106cfu/ml以上、又は当該食料、飼料又は医薬製品の表面に1x105cfu/cm2の濃度となるように添加する工程、並びに
(b)1つ以上のラクトバチルス・ラムノサス(Lactobacillus rhamnosus)株又は1つ以上のラクトバチルス・パラカゼイ(Lactobacillus paracasei)株の濃度が増大し、又は一定となるように、当該製造の過程で製造パラメーターを制御する工程
を含む、当該製造方法。 - 1つ以上の発酵工程を含む、請求項8又は9のいずれかに記載の方法。
