Description
下記表1に示した構成成分及び含量を混合して、ガムベースの製造工程を経て天然ガムベースを製造した。
製造例1〜8で用意した天然ガムベース、並びに下記表2に示した構成成分及び含量を混合してガムを製造した。具体的に、実施例1は製造例1で準備してガムベースを、実施例2は製造例2、実施例3は製造例3、比較例1は製造例4、比較例2は製造例5、比較例3は製造例1、比較例4は製造例6、比較例5は製造例7、比較例6は製造例8を使用したことを除いて、下記表2に示した構成成分及び含量を混合してガムを製造した。
実験例1~1:硬度テスト
探針 P/5 - φ5mm(円柱形状で直径が5mmの探針:プローブ)を用い、進入速度2mm/secの条件下でTexture Analyser TA.XT Plusを利用して硬度テストを行い、その結果を下記表3に示した。
レオメーター(RUD-J型)を使ってガムの応力の変化をテストし、その結果を下記表4に示した。
東洋精機社製の粘弾性測定装置(レオログラフ)を利用してガムの粘弾性テストを行い、その結果を下記表5に示した。
上記実施例1〜3及び比較例1〜6によって製造されたガムに対して官能検査を9点尺度法によって実施し、その結果を下の表6に示した。上記官能検査は、ガムの関連分野で3年以上携わって、官能検査の経験がある男女20名(男女それぞれ10名)によって測定するようにした。
Claims (3)
- (A)天然チクル、キャンデリラロウ、カルナウバロウ及びマイクロクリスタリンワックスを含む天然ガムベース25〜35重量%;
(B)エリスリトール20〜55重量%;
(C)D-キシロース10〜30重量%;
(D)酵素処理したステビア、羅漢果抽出物及びソーマチンからなる群から選択された1種以上の甘味料0.1〜3重量%;
(E)シトラス系香料0.8〜5重量%;及び
(F)乳化剤0.5〜2重量%;
を全体として100重量%を超えない範囲で含み、
前記天然ガムベース(A)は、当該天然ガムベース(A)の全重量に対して主要原料である天然チクルを50〜70重量%含有し、
前記天然チクルと前記エリスリトールの重量比は1:2〜1:4であることを特徴とする天然ガム組成物。 - 前記天然ガムベース(A)は、前記天然チクルに加え、
キャンデリラロウ10〜25重量%;
カルナウバロウ5〜15重量%;及び
マイクロクリスタリンワックス10〜25重量%;
を全体として100重量%を超えない範囲で含むことを特徴とする、請求項1に記載の天然ガム組成物。 - キャンデリラロウ、カルナウバロウ及びマイクロクリスタリンワックスの重量比が1〜2.5:1:1〜1.5であることを特徴とする、請求項1に記載の天然ガム組成物。
