を含有する容器詰飲料を提供するものである。

また、カテキン製剤として市販品を使用してもよい。市販品としては、三井農林社製の「ポリフェノン」、伊藤園社製の「テアフラン」、太陽化学社製の「サンフェノン」等が例示される。
(i)茶抽出物を水、又は水と水溶性有機溶媒(例えば、エタノール)との混合物(以下、「有機溶媒水溶液」という)に懸濁して生じた沈殿を除去する方法(例えば、特開2004−147508号公報、特開2004−149416号公報)。
(ii)茶抽出物を活性炭、酸性白土及び活性白土から選択される少なくとも1種の吸着剤と接触させる方法(例えば、特開2007−282568号公報)。
更に、容器に充填後、例えば、金属缶のような加熱殺菌できる場合にあっては適用されるべき法規(日本にあっては食品衛生法)に定められた条件で殺菌することができる。他方、PETボトル、紙容器のようにレトルト殺菌できないものについては、あらかじめ上記と同等の殺菌条件、例えばプレート式熱交換器などで高温短時間殺菌後、一定の温度迄冷却して容器に充填する等の方法が採用できる。また無菌下で、充填された容器に別の成分を配合して充填してもよい。
フィルター(0.8μm)でろ過し、次いで蒸留水で希釈した試料を、高速液体クロマトグラフ(型式SCL−10AVP、島津製作所製)を用い、オクタデシル基導入液体クロマトグラフ用パックドカラム(L−カラムTM ODS、4.6mmφ×250mm:財団法人 化学物質評価研究機構製)を装着し、カラム温度35℃でグラジエント法により測定した。移動相A液は0.1mol/Lの酢酸水溶液、B液は0.1mol/Lの酢酸アセトニトリル溶液とし、試料注入量は20μL、UV検出器波長は280nmの条件で行った。
ナトリウムイオンの濃度を原子吸光光度計を用いて分析し、塩素イオンの濃度を電位差滴定法により分析し、塩化ナトリウムとしての含有量を求めた。
各容器詰飲料の渋味について、専門パネル4名による飲料試験を行い、その後協議により評価値を決定した。飲用試験では、比較例1の容器詰飲料を標準とする相対評価とし、下記の基準にしたがって行った。
評点5:標準より渋味が強い
4:標準より渋味がやや強い
3:標準(比較例1)と同等の渋味
2:標準より渋味がやや弱い
1:標準より渋味が弱い
〔精製カテキン製剤の製造〕
市販の緑茶抽出物(ポリフェノンHG、三井農林社製)200gを常温、250r/min攪拌条件下の95質量%エタノール水溶液800g中に分散させ、酸性白土(ミズカエース#600、水澤化学社製)100gを投入後、約10分間攪拌を続けた。その後、2号ろ紙でろ過した。その後、活性炭16gを添加し再び2号ろ紙でろ過した。次に0.2μmメンブランフィルターによって再ろ過し、濁りの除去を行った。40℃、減圧下にてエタノールを留去し、減圧濃縮を行った。このうち150gをステンレス容器に投入し、イオン交換水で全量を2,000gとし、5質量%重炭酸ナトリウム水溶液6gを添加してpH5.5に調整した。次いで、22℃、150r/minの攪拌条件下で、イオン交換水2.1g中にタンナーゼKTFH(Industrial Grade、500U/g以上、キッコーマン社製)0.5gを溶解した液を添加し、30分後にpHが4.24に低下した時点で酵素反応を終了した。次いで、95℃の温浴にステンレス容器を浸漬し、90℃、10分間保持して酵素活性を完全に失活させた。次いで、25℃まで冷却した後に濃縮処理を行い、精製カテキン製剤を得た。精製カテキン製剤は、固形分中の非重合体カテキン類の含有量が63.4質量%、精製カテキン製剤中の非重合体カテキン類濃度が15質量%、非重合体カテキン類中のガレート率が43質量%であった。
表1に示す量の各成分を配合して飲料を製造し、クエン酸ナトリウム(扶桑化学社製)/クエン酸(扶桑化学社製)(質量比1/2)でpHを3.4に調整して65℃、20分間の加熱殺菌処理を行った後、PETボトルに充填し容器詰飲料を得た。得られた各容器詰飲料の成分分析及び官能評価の結果を表1に示す。
Claims (6)
- 次の成分(A)、(B)及び(C);
(A)非重合体カテキン類 0.03〜0.15質量%
(B)l−メントール 0.4〜4質量ppm
(C)塩化ナトリウム 0.01〜0.08質量%
を含有し、
前記成分(B)と前記成分(C)との含有質量比[(B)/(C)]が2×10 -3 〜4×10 -3 である、容器詰飲料。 - pHが2〜5である、請求項1記載の容器詰飲料。
- 前記成分(A)と前記成分(B)との含有質量比[(B)/(A)]が0.1×10-3〜4×10-3である請求項1又は2記載の容器詰飲料。
- 0.03〜0.15質量%の(A)非重合体カテキン類を含有する容器詰飲料の渋味抑制方法であって、
前記(A)非重合体カテキン類に、(B)l−メントールを0.4〜4質量ppm、(C)塩化ナトリウムを0.01〜0.08質量%含有させ、
前記(B)l−メントールと(C)塩化ナトリウムとの含有質量比[(B)/(C)]を2×10 -3 〜4×10 -3 に調整する、渋味抑制方法。 - pHを2〜5に調整する、請求項4記載の渋味抑制方法。
- 前記(A)非重合体カテキン類と前記(B)l−メントールとの含有質量比[(B)/(A)]を0.1×10-3〜4×10-3に調整する、請求項4又は5記載の渋味抑制方法。
