- バチルス・サブチルス(Bacillus subtilis)に属する納豆菌変異株であって、粘性物質の生産量が少ない糸引性低下納豆菌株IBARAKI 1st−1株(NITE P−01836)。
- 糸引きが弱い納豆を製造しうることを特徴とする請求項1に記載の糸引性低下納豆菌株IBARAKI 1st−1株(NITE P−01836)。
- 請求項1又は2に記載の糸引性低下納豆菌株IBARAKI 1st−1株(NITE P−01836)を用い、大豆を原料として納豆を製造することを特徴とする納豆の製造方法。
- 請求項3に記載の製造方法により得られる納豆。
