Description
デンプン試料の粒度分布は、目開きの異なる篩を使用した篩分け法により測定した。それぞれの篩上に留まった画分を秤量し、デンプン試料の総重量で割って、各篩で篩別された百分率を得た。
デンプン試料の粒子形状を、当該技術分野において周知のように、走査型電子顕微鏡を用いて100〜750倍の倍率で観察した。
デンプン試料の比表面積を、Gemini II 2370 Surface Area Analyzer(Micromeritrics NV/SA、Brussels、Belgium)を用いて、窒素吸収により測定した。多点(従来的には11点)BET法非特許文献2を用いて総有効表面積(BET比表面積)(m2/g)を測定した。
吸油性の測定は、所与の量のデンプン試料を含む油分散液を遠心分離にかけ、デンプンに結合しなかった油を除去し、ここで残留した、油を担持しているデンプン試料を高遠心力にかけ、デンプン試料に結合したままであった油の量を測定(遠心分離によって得られたデンプンを評価)することによって実施した。
デンプン試料25g(W0)を秤量し、ここにヒマワリ油25g(Vandemoortele、Belgium)を加えて2分間スプーンで十分に混合することにより油−デンプン混合物を得た。粘度が高過ぎる場合は油を追加した。750mlの丸型バケット用遠沈管(round bucket centrifuge bottle)に天然バレイショデンプン約360gを充填し、折った濾紙(直径150mm、Machery−Nagel MN614)を広げてバレイショデンプンの上に(その後に行われる遠心分離の間、濾紙が確実に定位置に留まるような小さい穴の中に)載置した。次いで、上で調製した油−デンプン混合物を濾紙に注いだ後、Heraeus Multifuge 3S遠心分離機を用いて、10分間、3434×gで遠心分離を行った。遠心分離完了後、濾紙をデンプン−油試料と一緒に遠沈管から取り出し、濾紙上に残ったデンプン−油試料を丁寧に取り除き、重量Wsを測定した。試料に吸収された油をWs−W0として求め、吸油性(%)を(Ws−W0)/W0×100%として表す。
試料を214.66×gで3分間遠心したことを除いて、ヒマワリ油に関し上述したものと同じ手順を用いた。使用したオレンジ油は、Cargill Flavour Systemsより入手したUden(CAS 8028−48−6)である。
ロール乾燥した一般的なコーンスターチ(C*12001、Cargillより入手可能)を125μmおよび315μmの篩で篩別し、上に定めた測定法を用いて、粒度が125μm〜315μmの画分についてヒマワリ油の吸収性を測定した。さらに、この画分のBET比表面積を上述したBET法で測定した。ヒマワリ油に対する吸油性は25%であり、BET比表面積は0.24m2/gであった(表1)。
ロール乾燥したPOCl3架橋コーンスターチ(C*12930、Cargillより入手可能)をRETSCH SR300ロータービーターミルで微粉砕した後に篩別し、100μm未満のより小さい粒子を除去した。結果として得られた材料は、この材料の51重量%の粒度が100μm〜375μmの範囲にあることを特徴とする。ヒマワリ油およびオレンジフレーバーに対する吸油性を上述した方法を用いて測定した。さらに、上述したBET法を用いてBET比表面積を測定した。ヒマワリ油およびオレンジフレーバーの吸油性はそれぞれ21%および28%であり、BET比表面積は0.26m2/gであった(表1)。
一般的なコーンスターチ(C*03401、Cargillより入手可能)を20ボーメの濃度で水中にスラリー化させた。このスラリーを、GMF Goudaからの試験的なロール乾燥器であるType E 5/5(500×500mmのローラー(ドラム)を備え、11rpm、蒸気圧7barで運転される)を用いてロール乾燥した。ドラムの最高表面温度は165℃であった。間隙は1.6mm(室温で測定)であった。試料を125μmおよび350μmの篩で篩別し、上述した測定方法を用いて粒度が125μm〜350μmの画分についてヒマワリ油の吸収を測定した。さらに、この画分のBET比表面積を上述したBET法を用いて測定した。ヒマワリ油に対する吸油性は31%であり、BET比表面積は0.26m2/gであった(表1)。
ドラム速度を13rpm、蒸気圧を8.5bar、最高ドラム温度を173℃としたことを除いて、オクテニルコハク酸デンプンナトリウム(C*06369、Cargillより入手可能)を実施例3に上述したようにロール乾燥した。ドラムからデンプンの薄膜を取り除き、微粉砕および篩別した。粒度が125μm〜325μmの篩別画分を用いて、ヒマワリ油に対する吸収性の測定および上述した測定方法を用いたBET比表面積測定を行った。ヒマワリ油に対する吸油性は37%であり、BET比表面積は0.23m2/gであった(表1)。
ロール乾燥された一般的なコーンスターチ(C*12001、Cargillより入手可能)を50μmの篩で篩別し、粒度が50μm未満の画分について、ヒマワリ油の吸収性を上述した方法を用いて測定した。さらに、この画分のBET比表面積を上述したBET法を用いて測定した。ヒマワリ油に対する吸油性は15%であり、BET比表面積は0.52m2/gであった(表1)。
Claims (7)
- 薄片形状のデンプン粒子からなる非顆粒状アルファ化デンプン材料からなる固体担体物質を含む液体担持デンプン粉末材料であって、前記デンプン粒子が、前記デンプン粒子の少なくとも50重量%の粒度が100μm〜375μmとなるような粒度分布を有し、かつBET比表面積が0.5m2/g以下であり、1種以上の液体成分が前記固体担体物質の内部および/または表面に吸収されている、液体担持デンプン粉末材料。
- 前記デンプン粒子の少なくとも80重量%の粒度が100μm〜375μmである、請求項1に記載の液体担持デンプン粉末材料。
- 前記固体担体物質の内部および/または表面に吸収された前記1種以上の液体成分が、前記液体担持デンプン粒子の総重量の少なくとも20重量%を構成する、請求項1または2に記載の液体担持デンプン材料。
- 請求項1〜3のいずれか一項に記載の液体担持デンプン粉末材料の調製方法であって、
(1)薄片形状のデンプン粒子からなる非顆粒状アルファ化デンプン材料を提供する工程と、
(2)工程(1)で提供された前記デンプン材料を撹拌しながら1種以上の液体成分を適用することによって、前記デンプン材料の内部および/または表面に1種以上の液体成分を担持する工程と
を含む、方法。 - 前記薄片形状のデンプン粒子からなる非顆粒状アルファ化デンプン材料が、
a)デンプンおよび水を混合することにより水性デンプンスラリーまたはペーストを調製する工程と、
b)前記水性デンプンスラリーまたはペーストを加熱された回転ロールまたはドラム上に適用することにより前記水性デンプンスラリーまたはペーストを同時に糊化および乾燥させることによって乾燥したデンプン薄膜を得る工程と、
c)前記乾燥したデンプン薄膜を前記ロールまたはドラムから取り除く工程と、
d)前記取り除かれた乾燥デンプン薄膜を粉砕することによって粉砕されたデンプン材料を得る工程と、
e)前記粉砕されたデンプン材料を篩別することによって、前記薄片形状のデンプン粒子からなる非顆粒状アルファ化デンプン材料を得る工程と
によって提供される、請求項4に記載の方法。 - 前記液体担持デンプン粒子に流動化剤および/またはケーキング防止剤が添加される、請求項4または5に記載の方法。
- 食品、動物飼料製品、医薬品、栄養補助食品、農薬、および化粧品またはパーソナルケア製品中に使用するための、請求項1〜3のいずれか一項に記載の液体担持デンプン粉末材料の使用。
