Description
(1)コーヒー固体を処理して、コーヒー固体を含有するコーヒースラリーを形成するステップと、
(2)酵素および酵素を安定化する有効量のコーヒー由来材料を含む安定化酵素組成物の形態の有効量の酵素を用いて、コーヒー固体を加水分解するのに十分な温度および時間でそのコーヒースラリーを処理して、可溶性コーヒー抽出物材料を形成するステップと、
(3)その可溶性コーヒー抽出物材料を処理して、可溶性コーヒー抽出物を得るステップと
を含む、可溶性コーヒー抽出物を製造する方法を提供する。
(1)焙煎コーヒー固体を微細に湿式粉砕して、コーヒー固体を含有するコーヒースラリーを形成するステップと、
(2)酵素および酵素を安定化する有効量のコーヒー由来材料を含む安定化酵素組成物の形態の有効量の酵素を用いて、コーヒー固体を加水分解するのに十分な温度および時間でそのコーヒースラリーを処理して、可溶性コーヒー抽出物材料を形成するステップと、
(3)その可溶性コーヒー抽出物材料を、濃縮水と、可溶性コーヒー抽出物を含む透過水とに分離するステップと
を含む、可溶性コーヒー抽出物を製造する方法を提供する。
(1)微細粉砕した焙煎コーヒー固体を、酵素および酵素を安定化する有効量のコーヒー由来材料を含む安定化酵素組成物の形態の有効量の酵素を用いて容器中で処理して、コーヒー固体を加水分解して、可溶性コーヒー抽出物を含有する可溶性コーヒー抽出物材料を形成するステップと、
(2)その可溶性コーヒー抽出物材料を半透膜分離装置を通して循環させて、濃縮水と、可溶性コーヒー抽出物を含有し、かつ連続的に集められる透過水とを連続的に形成し、少なくとも一部の濃縮水を容器中で再利用するステップと
を含む、可溶性コーヒー抽出物を半連続的または連続的に製造する方法を提供する。
(2)ソルビトールおよび塩化ナトリウム(各10%)、
(3)シリカ(40から100メッシュ、Fisher Scientific)、
(4)セルロース(Neocel(商標)粉末、Mingtai Chemical)、ならびに
(5)焙煎し挽いた(R&G)コーヒー(−30メッシュまで乾燥粉砕したMaxwell House(登録商標))
サンプル2から4を、酵素配合に使用される一般的な安定剤と配合した。各調製物を十分に混合し、次いでVirTis Model 25ES凍結乾燥器内ですぐに凍結乾燥させた。凍結乾燥した配合物の一部分を20℃および50℃で保存し、酵素活性のアッセイおよび微生物学的アッセイのために、各サンプルを異なる時間間隔で回収した。
(2)ソルビトールおよび塩化ナトリウム(各20%)、ならびに
(3)対照のFUM(添加剤なし)
水性液体配合物の部分を4、20、および50℃で保存し、実施例1と同じ分析技術を使用する酵素活性のアッセイおよび微生物学的アッセイのために、各サンプルを異なる時間間隔で回収した。酵素活性および生物学的結果を、それぞれ表3および4に示す。
Claims (9)
- 酵素およびコーヒー由来材料を含む安定化酵素組成物であって、
前記組成物は乾燥形態であり、
前記酵素は1から25パーセント、前記コーヒー由来材料は75から99パーセント含まれることを特徴とする安定化酵素組成物。 - 前記酵素は加水分解酵素であることを特徴とする請求項1に記載の組成物。
- 前記加水分解酵素は、マンナナーゼ、セルラーゼ、グルカナーゼ、ヘミセルラーゼ、リパーゼ、エステラーゼ、プロテアーゼ、アラビナーゼ、ガラクタナーゼ、アラビノガラクタナーゼ、ヌクレアーゼ、ペクチナーゼ、イソメラーゼ、アミラーゼ、リグニナーゼ、およびそれらの混合物からなる群から選択されることを特徴とする請求項1または2に記載の組成物。
- 前記コーヒー由来材料は、可溶性コーヒー、焙煎し挽いたコーヒー、コーヒー油、使用済みコーヒー粉砕物、挽いた未焙煎コーヒー豆、水性コーヒー抽出物、未焙煎コーヒー豆抽出物、およびそれらの混合物からなる群から選択されることを特徴とする請求項1から3のいずれか一項に記載の組成物。
- (1)焙煎コーヒー固体を処理して、コーヒー固体を含有するコーヒースラリーを形成するステップ、
(2)請求項1から4のいずれか一項に記載の安定化酵素組成物の形態の酵素を用いて、コーヒー固体を加水分解するのに十分な温度および時間で前記コーヒースラリーを処理して、可溶性コーヒー抽出物材料を形成するステップ、
(3)前記可溶性コーヒー抽出物材料を処理して、可溶性コーヒー抽出物を得るステップ、
を含むことを特徴とする可溶性コーヒー抽出物を製造する方法。 - ステップ(1)のコーヒースラリーは、焙煎コーヒー固体を湿式粉砕することによって形成され、ステップ(3)の可溶性コーヒー抽出物は、前記可溶性コーヒー抽出物材料を、濃縮水と、前記可溶性コーヒー抽出物を含む透過水とに分離することによって得られることを特徴とする請求項5に記載の方法。
- 前記可溶性コーヒー抽出物材料の、濃縮水および透過水への分離は、20,000から50,000ダルトンの分子量カットオフを有する半透膜を使用して実施されることを特徴とする請求項6に記載の方法。
- (1)微細粉砕したコーヒー固体を、請求項1から4のいずれか一項に記載の安定化酵素組成物の形態の酵素を用いて処理して、コーヒー固体を加水分解して、可溶性コーヒー抽出物を含有する可溶性コーヒー抽出物材料を形成するステップ、
(2)前記可溶性コーヒー抽出物材料を半透膜分離装置を通して循環させて、濃縮水と、可溶性コーヒー抽出物を含有し、かつ連続的に集められる透過水とを連続的に形成し、少なくとも一部の濃縮水を容器中で再利用するステップ、
を含むことを特徴とする可溶性コーヒー抽出物を半連続的または連続的に製造する方法。 - 前記半透膜は、20,000から50,000ダルトンの分子量カットオフを有することを特徴とする請求項8に記載の方法。
