- 柿渋である柿タンニンを含む柿に、コラーゲンペプチドを加え、粉砕・混合して水溶化している柿タンニンを1.2mg/g以下に調整することを特徴とする柿の脱渋方法。
- コラーゲンペプチドの平均分子量が3000〜5000であること特徴とする請求項1記載の柿の脱渋方法。
