Claims (1)
- トランスグルタミナーゼを添加し作用させた練り物状の鳥獣肉、魚肉、イカ、タコ、カニ、エビ又は貝類と、トランスグルタミナーゼを添加していない練り物状の鳥獣肉、魚肉、イカ、タコ、カニ、エビ又は貝類とを刃のない混合機にて5〜60秒混合して得られた混合物を加熱処理することを特徴とする蒲鉾、揚げ蒲鉾、竹輪、はんぺん又はソーセージの製造方法。
