Claims (1)
- 原料畜肉100g当り、水酸化カルシウム、酸化カルシウムの合計が0.01〜2gである水酸化カルシウム及び/又は酸化カルシウムと、原料畜肉100g当り、0.1〜1000ユニットのトランスグルタミナーゼ、及び、原料畜肉100g当り、0.1〜20gのクエン酸三ナトリウムを添加することを特徴とする、肉粒感の付与された畜肉練り製品の製造法。
